The cellar at Calais Winery

Calais winery is an up and coming winery in the Hill Country with a wine maker that really knows his stuff.  Ben Calais spent a lot of time working at wineries in France when he was growing up, so he shows a strong understanding of the process of making wine.  Ben recently finished his cellar in Hye, and is in the process of starting his estate vineyard which will focus on Tannat.  Calais was previously located in Dallas, so it's good to see them having some room to grow.

The tasting are in the cellar and are by appointment only.  It was easy to book online, but one can call for an appointment as well.  We tasted a few Roussanes made in a style not seen often in Texas with milder acidity and a heavier mouth feel, definitely nothing like I've had in another Texas white wine.  We also tasted a Tempranillo, a Cabernet, and a Bordeaux-style blend.  All were excellent, and we left with a bottle of his Tempranillo.
