Hilmey Cellars

Hilmy Cellars follows an interesting approach of having their main line being 100% Texas fruit, and having a second line, “Eric Hilmy a.k.a.”, based on fruit sourced out of state, primarily California and Washington.  Growing and sourcing grapes in Texas is difficult, so it’s common for wineries to have to source from outside of the state.  This dual approach allows Hilmy Cellars to embrace the source of their grapes while being upfront with their customers about the sources of their grapes.  The tasting pulls from current offerings from both lines of wines.  Hilmy Cellars's estate vineyard now includes Sangiovese, Petite Verdot, Tempranillo and Tannat.  A fun aspect of their winery is their animal helpers, including guineafowl, chickens, goats, and dogs.  They all have a role, and the tasting room staff will be happy to tell you about them.
